We rake the crack out, reinforce it, then build and feather the surface so it can handle normal seasonal movement. If a crack signals something structural, we will say so rather than paint over it.
Plaster is the smooth finishing layer. Plasterboard, often called gyprock, is the sheet that forms the wall or ceiling. A repair might involve the sheet, the finish, or both.
